Description: This will make you wanna slap your momma. No joke. You can also use pork instead of chicken. I make this at least twice a month. I also put a crap more garlic than the recipe calls for :)
My crockpot runs hot so mine is done in 7 hours verses 8.
Ingredients: 1lb boneless chicken, cut into cubes 2 cans (16oz each) black beans, drained 1 red or yellow bell pepper, chopped 1 medium tomato, peeled, seeded, and chopped 1 small red onion, thinly sliced 1 clove of garlic, crushed ½ tsp ground cumin 2 tsp chili powder ½ tsp salt 1 can tomato sauce
Directions: Stir everything together in slow cooker. Cover and cook on low for 8 hours. Top with mozzarella cheese, sour cream and fresh cilantro. Serve with tortilla chips.
