Description:
This will make you wanna slap your momma. No joke. You can also use pork instead of chicken. I make this at least twice a month. I also put a crap more garlic than the recipe calls for :)

My crockpot runs hot so mine is done in 7 hours verses 8.

Ingredients:
1lb boneless chicken, cut into cubes
2 cans (16oz each) black beans, drained
1 red or yellow bell pepper, chopped
1 medium tomato, peeled, seeded, and chopped
1 small red onion, thinly sliced
1 clove of garlic, crushed
½ tsp ground cumin
2 tsp chili powder
½ tsp salt
1 can tomato sauce

Directions:
Stir everything together in slow cooker. Cover and cook on low for 8 hours. Top with mozzarella cheese, sour cream and fresh cilantro. Serve with tortilla chips.

Awww.....this is so cute...I can remember when you didn't even know how to make mashed potatoes. Our little girl is growing up soooo fast!!!

Hey! Welcome BACK!!!

(You can slow-cook on a stove, too - a crock-pot really isn't that safe from a salmonella-standpoint).

Nothing wrong with garlic. I don't have a woman, so I eat all the garlic my system can handle -- it's good for my blood-pressure....

ahhh haaa...i was thinking scooping it with the chips...as like a dip? Hmm interesting...i think i may just make it and give them the option! thanks
