Y'know -- being as I'm from the Northwest, we did our best to do away with all gratuitous sugar and salt in our diets back in the '70's.

That means that a lot of Northwest every-day-fare is like eating cardboard - but we like it that way....

well, you and your cardboard lovin friends can fix your tea just the way you have for the past 30 years. we southerners will stick to the sugar loaded stuff. does that make us happier people?

Oh, hell - I dunno. It's a regional difference!!!!

Put another way -- it's all good, hon.......;)

i've never put baking soda in sweet tea either. not sure what the purpose is. i did some research and found several other sweet tea recipes that called for baking soda. all i know is that it's really really good :)

I was in Greenville, South Carolina on business once - I asked for a glass of iced tea before lunch, and was greeted with something which would have done double-duty on pancakes as syrup.

After choking the first sip, I asked the waitress if they had anything without sugar.

She looked at me funny, and said, "Y'all must be from Up Nawth". I admitted my guilt in that regard, and she brought me tea-sans-sugar.

Lesson: If you're from the Northern Tier, ask for unsweetened tea. The default is tea-flavored-pancake-syrup.....

The baking soda is to cause the tea to be smooth tasting. Baking Soda is a base, so it neutralizes the natural acids in the tea (just like the kids "volcano" expiriment with baking soda and vinegar). It really does make a difference. However, most recipes don't call for enough to make that difference. I add 1/2 t. of baking soda to a gallon of water (and 1 1/2 c. of sugar and 12 tea bags)
